Chex Mix Ideas











 There are so many Chex mix recipes out there, but a few years ago, my mom found this one. It's a lemon white chocolate Chex mix! I've been making variations ever since. It makes a great snack to carry along on pick-nicks, to take to a party, or to work because it doesn't have to be refrigerated, it doesn't melt in hot weather, and the best part about it, it only takes a few minutes to make!

Ingredients
Original recipe makes 12 cups
  • 9 cups Rice Chex® cereal
  • 1 1/4 cups white vanilla baking chips
  • 1/4 cup butter or margarine
  • 4 teaspoons grated lemon peel
  • 2 tablespoons fresh lemon juice
  • 2 cups powdered sugar

Directions

Into large bowl, measure cereal; set aside.
In 1-quart microwaveable bowl, microwave chips, butter, lemon peel and juice uncovered on High 1 minute; stir. Microwave about 30 seconds longer or until mixture can be stirred smooth. Pour mixture over cereal, stirring until evenly coated. Pour into 2-gallon resealable food-storage plastic bag.
Add powdered sugar. Seal bag; gently shake until well coated. Spread on waxed paper or foil to cool. Store in airtight container

   Of course there are a million variations to this recipe. My very favorite is to substitute the lemon for some peanut butter and add MnM's and pretzles! This makes a great valentines snack with the white Chexs and pink and white MnM's too. And these are just as good with regular milk chocolate.
